2009 BLANC du BOIS (Dry)

This premium wine is made from the Blanc du Bois wine grape variety grown in the coastal regions of Texas. These grapes were hand harvested in the cool morning hours, whole cluster pressed, inoculated with cultured yeast, and fermented at 55°F to retain the fruit flavors that are characteristic of this variety. This wine is finished “DRY” and has a clean, crisp mouthfeel. It exhibits a fresh citrus finish of grapefruit and green apple, and pairs nicely with seafood, poultry, cheese and creamy pasta dishes.

2009 RESERVE Blanc du Bois

Our Reserve Blanc du Bois was transferred to the cellar into toasted oak barrels for fermentation. Near the end of primary fermentation, the wine was inoculated with secondary cultured yeast to complete a malo-lactic fermentation. This secondary fermentation converts harsher malic acid into lactic acid. This conversion softens the mouthfeel and adds additional taste descriptors like butter and cream. The typical Blanc du Bois character still prevails with its crisp citrus aromas resulting in an elegant and finely-balanced wine. The wine was then allowed to age on the yeast lees (sur lie) for three months and is stirred according to a specific plan (battonage). The yeast cells break down during this process and contribute further roundness to the mouthfeel. This wine pairs well with creamy mild cheeses, roasted pork and poultry.

2009 Blanc du Bois (Semi-Sweet)

This is our best selling signature, award-winning and crowd-pleasing white wine. It was made from grapes grown in our vineyards in Santa Fe, Texas and from grapes grown in Fulshear, Texas; Cat Spring, Texas; Palestine, Texas; Harleton, Texas and Brenham, Texas. The grapes were crushed, pressed and fermented in stainless steel at 55°F to retain floral and fruit aromas that are characteristic of this grape variety such as peach, apricot, pear, green apple, figs and grapefruit. The residual sugar in this wine is 2.5 %, which is considered semi-sweet of off-dry.
